Tuesday, March 20, 1832   George Hauck

George Hauck was born in Bavaria to a family of brewers. In 1844 his father Adam Hauck moved his wife and two sons to America. They settled in New York City, on the corner of Wooster and Broome, where Adam quickly put up a brewery.

In 1851 George went to Cincinnati, to further study the art of brewing, while his younger brother Peter continued his education in the brewery. In 1856 George returned to New York and obtained a position with Kress and Schaefer's Brewery on 54th Street. He then entered the employ of a brewery called the Lyon and remained there until it was destroyed by fire some time around 1860. In 1861 Hauck became employed by William Bertsche, who had a brewery on Hone and Spring Streets. In 1864 Hauck partnered with George Dressel to form a brewery in Rondout called Geo. Dressel & Company. When Dressel died in 1884 Hauck continued the brewery as a sole proprietor. His sons were brought into management in 1902, and George, now aged 70, all but retired.

George Hauck died on April 21, 1912 at 80 years of age. His brewery closed in 1916 during the run up to Prohibition. The facility was reborn after Repeal and operated as the Peter Doelger Brewery for several years. A last ditch effort to capitalize on the Hauck name was not enough to save the brewery. The freshly rebranded Hauck Brewing Co., Inc. closed for good in 1938.
